CALIFORNIA AVOCADO SCRAMBLE
Fresh California Avocado, diced
tomato slices, diced
red onion, diced
bell pepper mix (green and red)
shredded Jack cheese
- Dice avocado, set aside. Sauté vegetables in egg fry pan. Whip 2 eggs and pour on top of vegetables. Scramble eggs with vegetables. Cook until done, sprinkle with cheese and top with avocado.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
