1/3 Fresh California Avocado, diced
1/2 oz. spinach leaves
2 tomato slices, diced
1 oz. red onion, diced
1 oz. bell pepper mix (green and red)
2 eggs
1 oz. shredded Jack cheese

Instructions

  1. Dice avocado, set aside. Sauté vegetables in egg fry pan. Whip 2 eggs and pour on top of vegetables. Scramble eggs with vegetables. Cook until done, sprinkle with cheese and top with avocado.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
