1/4 cup Dijon mustard
3 cups vinaigrette
12 California Avocados
1/3 cup lemon juice
3 gal. mixed lettuces
3 1/2 qt. smoked turkey or chicken, cut into strips
3 cups dried cherries or cranberries
24 (6-inch) prepared bread shells

Instructions

  1. Whisk mustard into vinaigrette; reserve.
  2. Just before service, cut avocado in 1/4-inch dice; toss gently with lemon juice. Reserve.
  3. Per Order:
  4. Toss 2 cups lettuce, 1/2 cup (slightly mounded) turkey or chicken, and 2 tablespoons dried fruit with 2 tablespoons reserved vinaigrette. Fold in 1/2 cup avocado. Mound on top of one warmed bread shell.
