California Avocado Roasted Garlic Dip

3 lb. California Avocados 1/3 cup lemon juice 4 garlic head, roasted and squeezed from skin* 1/2 Tbsp. garlic, chopped 1/4 cup parsley, chopped 1/2 Tbsp. dried oregano 1/2 Tbsp. salt 1/2 tsp. coarsely ground black pepper
  1. METHOD
  2. Roughly mash avocado. (Texture should not be smooth.)
  3. Fold remaining ingredients into avocado. Chill 1 hour to marry flavors.
  4. Serve 1/4 cup dip with onion flowers, fried vegetables, chicken wings or use as a topping for grilled meat, poultry, fish or egg dishes.
  5. *To roast garlic put cloves in a square of foil, drizzle with 1 tsp. olive oil. Seal foil. Bake at 450 degrees F until garlic is very soft but not brown. Gently squeeze cloves from skin.

Serving Size = 1/4 Cup

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
