Vegan Bacon California Avocado Guacamole Burger

12 vegan burger patties, cooked to order 12 vegan potato buns, toasted if desired 6 cups Fresh California Avocado Guacamole (42 oz.) (recipe follows) 6 oz. vegan bacon bits, hickory style 9 oz. butter lettuce 10 oz. white onion, thinly sliced 12 oz. vegan mayonnaise Fresh California Avocado Guacamole (Yield: 6 cups) 6 Fresh California Avocados, peeled, pitted 3 Tbsp. lime juice 1 1/2 cups Roma tomatoes, seeded and finely chopped 2 1/4 cups red onion, finely chopped 3/4 cup cilantro, finely chopped As needed Salt and black pepper, to taste

Fresh California Avocado Guacamole:

  1. Mix all ingredients together until slightly chunky.

Assemble:

  1. For each sandwich, spread 1 oz. vegan mayonnaise on the bottom bun.
  2. Top with 1 vegan burger patty, ½ cup guacamole, ½ oz. vegan bacon, ¾ oz. butter lettuce, ¾ oz. sliced onion, then the top bun.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
