St. Patrick’s Day Guacamole

St. Patrick’s Day guacamole is chock full of great Irish ingredients like sharp cheddar, carrots, bacon, parsley, and onion. California avocados may not be the most Irish of fruits, but they’re green so they fit with the St. Paddy’s Day theme, right?

Ingredients

Serves: 6

3 California Avocados
Juice from 1/2 lemon
1/2 cup carrots, very finely diced
1/4 cup red onion very finely diced
1/4 jalapeño seeded and very finely diced (optional)
1 clove of garlic, crushed
3 slices cooked bacon chopped
1/4 cup very finely chopped parsley
2 oz. Irish cheddar, crumbled
heavy pinch of salt
heavy pinch of fresh ground black pepper

As with all fruits and vegetables, wash avocados before cutting.

Instructions

  1. In a large bowl, mash avocado with lemon juice, salt, and pepper.
  2. Stir in the carrots, onion, garlic, chili, bacon, parsley, and cheese. For a beautiful presentation, leave a small portion of the mix-ins out and use them for garnish.

Serving Suggestion: Serve with fresh veggies for dipping or with tortilla chips or kettle cooked potato chips
