Roasted Hatch Chile and California Avocado are a terrific flavor combination. Here they are blended with other fresh ingredients to create an unforgettable salad dressing or dip.

1 ripe, Fresh California Avocado, seeded, peeled and chopped 1 Hatch chile, roasted, seeded and chopped 1/3 cup extra virgin olive oil 3 Tbsp. fresh lemon juice 1 clove garlic, minced or crushed 1 Tbsp. minced cilantro (or to taste) 1/8 tsp. sea salt, or to taste
  1. Combine all ingredients in a blender or processor and blend until smooth.

Serving Suggestions: Serve as a salad dressing as shown or as a dip for crisp veggies.

Beverage Pairing: Pair with a light, sweet wine like Moscato.
