This very simple guacamole is a California twist on the flavors of the Nordic diet. It is delicious for dipping or can be used as a spread on sandwiches or topping for grilled fish.

4 Fresh California Avocados peeled, seeded and mashed 1 Tbsp. fresh lemon juice 1 Tbsp. fresh dill, minced 1/2 cup sour cream 1 Tbsp. chives, thinly sliced 1/2 tsp. sea salt, or to taste
  1. Gently combine all the ingredients and serve.

Serving Suggestion: Serve with thin rye crackers, cucumber rounds and sliced red bell peppers, or add to the classic Scandinavian “coffee table” with makings for open-faced sandwiches. Also delicious with steamed baby potatoes.

Beverage Pairing: Chilled vodka for sipping
