California Avocado, Tomato and Bacon on Triscuit Crackers

1 ripe, Fresh California Avocado, seeded, peeled and mashed 8 Triscuit® crackers (Black Pepper or your favorite variety) 2 cocktail-size tomatoes, each cut in 4 slices 2 slices cooked, crisp maple bacon, quartered width-wise*
  1. Spread the mashed avocado on each of the crackers.
  2. Top each cracker with one slice of tomato and a quarter slice of cooked bacon. Serve immediately.

* Tip: Cut the bacon slices into quarters before cooking them.

Serving Suggestions: Prepare just ¼ of the recipe for an individual snack or quick and easy breakfast. You can vary by adding a little hot sauce, lemon juice or seasoning to the mashed avocado. Also delicious with a slice of hard-boiled egg.

Beverage Pairing: Serve with orange juice for breakfast or a sparkling beverage for a snack.
