This healthy recipe only takes a few minutes to whip up! It has the best favor without hardly any work. You will love this easy lunch (or light dinner) idea.

Ingredients

Serves: 4

1 1/2 ripe, Fresh California Avocados, seeded and peeled
1/2 cup Greek yogurt, plain, nonfat
1 cup chicken, cooked and cubed or shredded
1/2 tsp. salt
1/8 tsp. pepper
1/2 tsp. garlic powder
1/4 tsp. curry powder, optional
1/2 cup celery, chopped
1/4 cup red onion, diced
1/4 cup grapes, chopped
1/4 tsp. fresh lime juice
2 flour tortillas, large (burrito size)

As with all fruits and vegetables, wash avocados before cutting.

Instructions

(Makes 2 large wraps)

  1. Scoop one avocado into a bowl and mash with fork
  2. Stir in Greek yogurt
  3. Fold in chicken, salt, pepper, garlic powder and curry powder
  4. When combined, add celery, onion, grapes and lime juice
  5. Spread mixture onto tortillas
  6. Slice half avocado and spread on top and roll up
  7. Slice in half and serve
  8. Leftovers store well in the refrigerator in air-tight container

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
