Ingredients
1 1/2 ripe, Fresh California Avocados, seeded and peeled 1/2 cup Greek yogurt, plain, nonfat 1 cup chicken, cooked and cubed or shredded 1/2 tsp. salt 1/8 tsp. pepper 1/2 tsp. garlic powder 1/4 tsp. curry powder, optional 1/2 cup celery, chopped 1/4 cup red onion, diced 1/4 cup grapes, chopped 1/4 tsp. fresh lime juice 2 flour tortillas, large (burrito size)Instructions
(Makes 2 large wraps)
- Scoop one avocado into a bowl and mash with fork
- Stir in Greek yogurt
- Fold in chicken, salt, pepper, garlic powder and curry powder
- When combined, add celery, onion, grapes and lime juice
- Spread mixture onto tortillas
- Slice half avocado and spread on top and roll up
- Slice in half and serve
- Leftovers store well in the refrigerator in air-tight container
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
