Ingredients

Serves: 2

As needed lemon juice, dijon, honey, salt, and pepper
As needed avocado, tomato, pumpkin seeds & hemp seeds and vinaigrette

As with all fruits and vegetables, wash avocados before cutting.

Instructions

In a bowl, whisk together the lemon juice, dijon, honey, salt, and pepper. Slowly pour in the olive oil, whisking constantly. Place the avocado, tomato, pumpkin seeds & hemp seeds in a large bowl. Drizzle with vinaigrette and toss lightly. Taste for seasonings and serve immediately.
