Avocado and Spicy Shrimp Summer Roll

Spicy grilled shrimp, cool and creamy avocado, crisp cucumber and lettuce- bursting with fresh lime and cilantro, wrapped together in a light wrapper.

Ingredients

Serves: 4

2 ripe, Fresh California Avocados, peeled, seeded and thinly sliced short wise
1 cucumber, peeled, seeds removed and cut into matchsticks, 2” long x ¼” wide
1 head romaine lettuce, washed, dried and torn into 3" x 3" pieces
1 bunch fresh cilantro, washed, dried and leaves torn or chopped
1 lime, zested and juiced (in separate containers)
1 pkg. spring roll wrappers, round
1 lb. shrimp, raw, large, deveined (peeled or unpeeled)
As needed sriracha, to taste (1-3 Tbsp.)
1 clove garlic, large, grated
1 Tbsp. extra virgin olive oil, plus 1 Tbsp. for cooking if needed

As with all fruits and vegetables, wash avocados before cutting.

Instructions

  1. Toss the shrimp in the sriracha, lime zest, garlic and extra virgin olive oil in a medium bowl. Cover and refrigerate while preparing the vegetables.
  2. Prepare the vegetables as described and chill while cooking the shrimp.
  3. Cook the shrimp outdoors in a grill pan, or on skewers with 1 Tbsp. extra virgin olive oil (if needed) over a med/hi fire, or if cooking indoors, in a large skillet with 1 Tbsp. extra virgin olive oil (if needed) over med/hi heat until the shrimp become pink, opaque and just cooked through- about 3-5 minutes. Remove from heat, transfer to a platter to cool slightly. Peel if necessary and remove tails.
  4. While the shrimp cool, soften the spring roll wrappers in a bowl of warm water. Transfer wrappers to a plate (one at a time). Place 4 thin slices of California Avocados down the middle of the wrapper. Top with 1-2 pieces of lettuce, 5-10 cucumber matchsticks and 3 shrimp. Finish with a sprinkling of cilantro and plenty of lime juice. Wrap tightly, as you would a burrito or egg roll. -Enjoy as a light and flavorful summer treat!

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
