Accent pan-seared tilapia tacos with a fiesta of color and flavor, starting with fresh Naturipe® Strawberries, California Avocados and pickled red onions. This recipe is an excellent source of selenium (56% Daily Value), vitamin c 52% DV, folate 24% DV, phosphorus 23% DV and vitamin B12 21% DV and a good source of potassium 19% DV, riboflavin 19% DV, dietary fiber 16% DV, niacin 16% DV, vitamin B6 15% DV, vitamin k 14% DV, Manganese 12% DV, magnesium 11% DV and pantothenic Acid (B5) 10% DV.

1 cup thinly sliced red onion 1/4 cup lime juice 1/2 tsp. salt, plus additional to taste 1 cup diced ripe, Fresh California Avocado 1 cup diced fresh Naturipe® Strawberries 1 Tbsp. vegetable oil 6 pieces tilapia filets 6 flour tortillas, regular or whole wheat 3 Tbsp. minced jalapeño 6 Tbsp. crema (or sour cream, thinned)
  1. To make pickled red onions: in a bowl, combine the red onions with half of the lime juice and salt; stir and refrigerate for at least one hour.
  2. In another bowl, combine the diced avocados and strawberries; gently toss with the remaining lime juice.
  3. Season the fish with salt if desired. Heat the vegetable oil in a large sauté pan until nearly smoking; sear the fish on both sides until golden brown and cooked through (about 2-3 minutes per side depending on the thickness of the fish).
  4. Lay the tortillas flat and top each with 1 Tbsp. crema, 1 cooked tilapia filet, ½ Tbsp. jalapeño and 1 Tbsp. pickled red onions. Divide strawberry-avocado mixture evenly among the tacos and serve immediately.

Serving suggestion:  The strawberry and avocado-topped tilapia is also delicious as an entrée without the tortillas. Serve with a side salad, lentils or black beans.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
