Avocado Dessert Whip


I made up this recipe to have a unique way to serve my avocados for a cool summertime treat!


Serves: 8

As needed 1/2 cup heavy whipping cream
As needed 2 Tablespoons sugar
As needed 1/4 teaspoon pure vanilla extract
As needed 1/4 teaspoon lemon juice
As needed 1 large ripe avocado, seeded, peeled, and mashed well with a fork
As needed Slivered almonds, toasted and crushed for garnish

As with all fruits and vegetables, wash avocados before cutting.

In a large bowl, beat the heavy whipping cream, sugar, vanilla, and lemon juice with an electric whisk (or by hand) until soft peak forms. Add the avocado to the whipping cream mix and hand whisk until well blended. Refrigerate for 20 minutes to chill. Serve with berries and garnish with almonds.
