Tangy Mediterranean Guacamole


A tangy, Mediterranean twist on classic guacamole.


Serves: 6

As needed 4 large or 6 small California avocados
As needed 2 T plain yogurt
As needed 3 T sliced pepperoncini peppers + 1/4 c brine from the jar
As needed 1/8 tsp garlic powder
As needed 1/8 tsp coarsely ground black pepper
As needed 1/4 tsp sea salt
As needed 1/3 c sliced oil-pack sun-dried tomatoes
As needed 1/2 c goat cheese crumbles

As with all fruits and vegetables, wash avocados before cutting.

Remove peels and pits from avocados and put all the flesh in a medium-sized bowl. Add yogurt and pepperoncini brine, garlic powder, black pepper, and sea salt. Mash everything together with a fork until you reach desired consistency and everything is thoroughly combined. Stir in sliced peppers, tomatoes, and goat cheese crumbles, reserving some of each for garnish, if desired. Adjust the salt and pepper to taste. Serves 6.
