California Avocado Sushi Rice:
- Combine sushi rice, avocado, and mayonnaise in a bowl. Add wasabi paste to taste.
- Form the California Avocado Sushi Rice into a rectangular shape on a plate, roughly the size of the unagi.
- Heat a grill to medium high heat. Grill unagi for 1 minute on each side. Remove from heat.
- Glaze unagi with teriyaki sauce, then garnish with sesame seeds and chives. Lay unagi over the rice. Garnish with shaved bonito. Serve.
*A large Fresh California Avocado weighs about 8 oz.
