Seafood and Avocado Summer Salad



Serves: 4

1 pkg. (6 oz.) Fresh Express® 5-Lettuce Mix™
1/4 cup red onion, finely chopped
1/2 cup celery, sliced
2/3 cup fresh mango, diced
1/4 cup red bell pepper, julienne sliced
8 oz. small cooked shrimp and/or lump crab meat
2 ripe Fresh California Avocado, diced
5 oz. Litehouse® Ranch Dressing

As with all fruits and vegetables, wash avocados before cutting.

  1. In a large salad bowl toss together Fresh Express 5-Lettuce Mix, red onion, celery, mango and red bell pepper.
  2. Top with shrimp or crab and ripe Fresh California Avocado.
  3. Toss with Litehouse Ranch Dressing just prior to serving.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
