California Avocado - Pineapple Relish for Grilled Meat, Poultry or Fish

Pineapple provides the perfect counterpoint to the lush texture and subtle, nutty flavor of California avocado in this versatile relish. Serve it with grilled meat, poultry or fish or layer it on a turkey, ham, or cheese sandwich.

Ingredients

Serves: 24

1/3 cup lemon juice
4 California Avocados, cut in 1/4-inch dice
12 oz. pineapple, cut in 1/4-inch dice
6 oz. finely chopped onion
1/4 cup chopped, fresh mint
1 tsp. salt
1/4 tsp. crushed red pepper (optional)

As with all fruits and vegetables, wash avocados before cutting.

Instructions

  1. Gently fold lemon juice into avocado.
  2. Fold in remaining ingredients.
  3. Chill 1 hour to marry flavors.
