Balsamic-Roasted Onion Guacamole


Sweet and savory balsamic-roasted onion and Fresh California Avocados combine for a uniquely delicious guacamole.


Serves: 8

1 large purple onion, chopped
2 cloves garlic, chopped
2 Tbsp. balsamic vinegar
1 Tbsp. olive oil
4 ripe, Fresh California Avocados*
1 Tbsp. lemon juice
1/2 tsp. salt
1/2 tsp. dried Italian seasoning

As with all fruits and vegetables, wash avocados before cutting.

  1. Toss together first 4 ingredients
  2. Place in an aluminum foil-lined baking pan.
  3. Bake in a 425 degree F oven for 25 to 30 minutes or until lightly browned, stirring once.
  4. Cool.
  5. Seed, peel and mash avocados in a medium bowl.
  6. Stir in onion mixture, lemon juice, salt, and Italian seasoning.
  7. Chill 1 hour.
Serving Suggestions:
Serve with toasted baguette rounds or tortilla chips.
