Spice up a regular grilled chicken dinner recipe by topping your chicken with some yummy citrus avocado sauce. The fluffy couscous is light and easy to pair with your chicken breasts, and the California Avocados provide creamy texture and bright color in the form of a zesty sauce.

Creating this grilled chicken avocado dish is remarkably easy, and it’s a great way to use up some fresh, ripe avocados. The avocado sauce gets its tang from a mix of orange, lime and lemon juices, which you can adjust to your liking, mixed into whipping cream.

Serves: 6

3 cloves garlic, finely chopped 1/2 cup unsalted butter, divided 1/2 cup Whipping cream 1/2 tsp. finely chopped orange zest 2 Tbsp. orange juice 1 Tbsp. lime juice 1 Tbsp. lemon juice 1 ripe, fresh California Avocados, peeled, seeded and pureed 1/4 tsp. salt, plus additional to taste 6 (about 6-oz.) boneless, skinless chicken breast halves As needed black pepper 6 each lemon, lime, and orange slices
  1. Sauté garlic in 1 teaspoon butter until soft but not colored, about 2 minutes.
  2. Stir in cream.
  3. Heat to a simmer, stirring frequently; do not boil.
  4. Stir in orange zest, juices, avocado, and salt. Keep warm.
  5. Melt remaining butter.
  6. Brush chicken with butter.
  7. Season chicken with salt and pepper.
  8. Grill chicken until internal temperature reaches 165 degrees F, or bake at 450 degrees F until chicken is browned and just firm to the touch, about 15 minutes.
  9. Serve each breast with 1/4 cup avocado sauce; garnish with a slice of each citrus fruit.

Serving Suggestions:
Serve on a bed of rice, couscous or other cooked grains.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
