Grilled swordfish gets a fresh pairing with colorful salsa that combines creamy California Avocados, tangy citrus, smoky chipotle peppers, red onions and cilantro. California Avocado Grapefruit Salsa 1 lime, zest grated, and juice reserved 1 1/2 Tbsp. honey 2 medium red grapefruit, peeled and segmented, juice reserved 1 1/2 tsp. chipotle peppers in adobo sauce, seeds and membranes removed, diced 2 Tbsp. finely diced red onion 1/2 tsp. ground cumin 1/2 tsp. sea salt 1/2 cup cilantro, chopped 2 ripe, Fresh California Avocados, peeled, seeded and diced Grilled Swordfish 1/4 cup vegetable oil 3 cloves garlic, finely chopped 1 Tbsp. ground cumin 1 1/2 tsp. sea salt 6 (6-oz.) swordfish steaks California Avocado Grapefruit salsa (see recipe below) Cilantro sprigs, as needed for garnish

California Avocado Grapefruit Salsa

  1. In a medium bowl, Mix lime zest and juice with the honey.
  2. Gently stir in grapefruit and reserved juice, peppers, onions, cumin, salt and cilantro.
  3. Fold in the avocados and use immediately.

Grilled Swordfish

  1. Mix oil, cumin and salt.
  2. Rub mixture on swordfish steaks. Grill swordfish until just firm to the touch, about 3 minutes per side.
  3. Top grilled fish with California Avocado Grapefruit Salsa.

Serving Suggestion: Serve with grilled veggie kebabs and a wild rice blend.

Beverage Pairing: Sauvignon Blanc.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
