Whether they come from hole-in-the-wall taquerias, street-corner push-carts or one of the taco trucks around my neighborhood, street tacos are high on my list of favorite foods. While searching for Cinco de Mayo recipes, I came across four street taco recipes from Sabrina Modelle, The Tomato Tart, that looked easy enough to take off the street and make in my own kitchen. So that’s exactly what I did with a little help from Sabrina.

While you’re planning for a Cinco de Mayo party, add these tacos with California Avocado to the menu.

This shortcut taco recipe uses roasted or rotisserie chicken to save time—a great use for leftover chicken. You’ll love the rich, smoky flavor from chipotle chiles and fresh radishes in the slaw, a favorite at taquerias, which add crunch and heat. Of course, California Avocados cool down the spiciness and add a luscious creaminess.

This is a traditional recipe, perfect for Cinco de Mayo celebrations. Cumin-seasoned grilled steak is topped with grilled California Avocado, cilantro, onion, and salsa for a quick and easy street taco night at home.

Shrimp tacos are taco truck favorites, probably because they’re crowd-pleasers. Roasted garlic and shrimp are a natural flavor pairing. Topped with a creamy avocado garlic sauce, these are an especially delicious variation. Make the garlic oil in advance and the recipe turns into a 10-minute dinner.

Potato and Kale Tacos with Avocado Salad

Potato tacos are a popular street food, especially in San Diego, CA. Usually rolled, fried, and topped with saturated fat-laden toppings, this makeover uses sautéed kale, mashed potatoes, fresh avocado salad, and just a bit of queso fresco. For a vegan option, make them without the queso fresco. Try these tacos for Meatless Monday orTaco Tuesday! The avocado Salad topping is also delicious on other tacos and Cinco de Mayo recipes.
