As with all fruits and vegetables, wash avocados before cutting.
Check out our tips for how to choose and use California Avocados.

With avocado recipes quickly coming out of our test kitchen during the California Avocado season, it’s easy for a few to get lost in the shuffle. That’s why I thought it would be fun to take a look back at some of the recipes we may not have featured here on The Scoop, in case you missed them.

Here are the top 5 recipes you may have missed this California Avocado season.

California Avocado Recipes

California Avocado Angel Eggs

A delicious, new twist on an old classic. Smooth and creamy deviled eggs with no mayo, but lots of fabulous flavor. We think they’re so heavenly, we changed the name to “Angel Eggs!”

Summer Harvest Salad

This Summer Harvest Salad is loaded with the abundant produce of summer. From juicy grape tomatoes, bursting with flavor, to fresh, creamy California Avocados and of course, grilled sweet corn, this is summer in a bowl. What better way to say goodbye to one of my favorite times of the year and to welcome a new season of abundance? Enjoy!

Avocado Egg Salad Sandwich

Simple and delicious. A green twist on the classic egg salad, with added California Avocados.

California Avocado Cornbread

If creamy, buttery cornbread is your thing, this avocado cornbread is just the ticket. Packed with chunks of avocado, this cornbread comes together in just under 20 minutes and only requires 8 ingredients.

California Avocado Mayonnaise

Substitution and avocado preservation methods seem to be really popular in the comments of this blog, so I’m excited to share this new recipe. California Avocado Mayo is a fresh, low-fat and low-sodium nutritious substitute for regular mayonnaise with 2.5 g of total fat, and all of it is “good fat.” It’s delicious and adds a beautiful gourmet touch to sandwiches, salads, appetizers and just about anything else you’d usually use mayonnaise for.

Since the 2015 California Avocado season has all but ended, things will be a little more quiet around here while we prepare for next year. Keep up with us in the meantime on Facebook, Twitter, Instagram or Pinterest.
