Light and Fluffy California Avocado Dinner Rolls

I love experimenting with California Avocados in new recipes, but especially baked goods. 

I first started my foray into including avocados in baked goods a few years ago, but only recently did I get really adventurous and try adding avocados into bread machine yeast bread recipes. The experiments have been a huge success, resulting in yeast bread recipes that are light, fluffy and flavorful!

My rule of thumb with adding California Avocados into yeast bread recipes is to replace all of the butter in the recipe with equal amounts of room temperature, mashed, ripe avocado. The ripeness of the avocado is very important as the avocado needs to be very soft for it to work perfectly. Yeast bread recipes are a great way to use up those leftover avocados that may have passed the ideal stage of ripe perfection.

Replacing the butter in this dinner roll recipe with avocado changes the nutritional component, but really doesn’t change the flavor profile of the rolls. In fact, if anything, I’d say these rolls are lighter and fluffier than their butter filled counterpart.

Light and Fluffy California Avocado Dinner Rolls Recipe

Prep Time: 15 minutes
Total Time: up to 3 hours depending on bread machine dough cycle

Ingredients: 
1 cup warm milk (70°F)
1 ripe California Avocado, mashed and at room temperature
2 eggs, beaten and room temperature
¼ cup sugar
1 ½ teaspoons salt
4 cups bread flour
2 ¼ teaspoons active dry yeast
1 tablespoon butter for topping, optional

Instructions:
Add ingredients to the pan of your bread machine in the order recommended by the manufacturer. Select dough cycle and start.

Once the dough cycle is completed, turn dough onto a lightly floured surface and divide into 18 equal pieces. 

Shape dough into round balls and place into a lightly greased/buttered 9x13” baking pan.
Cover and let rise in a warm place for 30 minutes.

Bake at 350°F for 15 minutes or until golden brown. 

If desired, brush tops with melted butter.
