I am looking forward to a grill-filled Memorial Day weekend. Not only do I have three days off to relax and eat good food with my girlfriend and friends, but it’s also the beginning of BBQ season, which for me means beach days and get-togethers. “Don’t forget the guacamole!” my friends would say.

Anyway, to prepare for this weekend’s Memorial Day menu, I looked to Instagram, Twitter and California Avocado.com for recipe ideas. I found some delicious avocado recipes perfect for any get-together or BBQ, from salads to the main course to snacks, which were too good not to share with you.

Avocado Salads

California Confetti Salad

Lisa from My Fancy Nest invented this California Confetti Salad recipe “because it is a vibrant variation from guacamole but still features avocado as the star ingredient.”  What a great idea! Just further proof that a salad doesn’t need to be all leafy greens to be delicious (or considered a salad for that matter).

Avocado, Roasted Corn and Shrimp Salad

This new recipe by Robin of Robin’s Bite, from a Recipe Redux blogger contest, does double duty as a main dish or a starter. Savory seasoning and summer freshness abound in this crunchy, creamy salad.

Main Course: On the Grill

Grilled Salmon with Avocado Salsa I discovered this recipe from the Cookie Rookie when Udi’s shared it on Twitter. Salmon is a delicious alternative to burgers (pescatarian or not!) for a simple grilling recipe and the fresh avocado salsa looks quick to whip up.  

 

 

 

Guacamole Burger

Basic Guacamole

Basic, but satisfying: avocados, garlic, lemon juice and salt. Dip chips or fresh veggies into this guacamole recipe from Sprinkles and Sauce for an afternoon snack. Have you ever noticed how people seem to congregate around the guacamole?

Pico de Gallo + Guacamole = Pico de Guaco. What a great recipe concept from Melissa at Bless this Mess! Juicy tomatoes, Fresh California Avocados and onion will blend for a refreshing snack. I have a feeling the bowl will be empty too quickly at my house!
