This is my favorite time of the year when the calendar turns over from February to March - winter is coming to a close, spring is right around the corner (which means California Avocados are available in some stores) and National Nutrition Month® kicks off! This year’s National Nutrition Month® theme, Bite into a Healthy Lifestyle, makes including California Avocados a no-brainer. With the weather warming up it’s a perfect time to switch out of our hot soups and stews, and move on to refreshing salads costarring this velvety fruit.

As a consumer I adore California Avocados in my salads to lend the delectable creaminess that helps bring out the flavors of the other fruits and veggies I’ve tossed together. As a registered dietitian I feel good recommending naturally sodium and cholesterol free avocados as part of a healthful diet. It’s a win-win!

But wait there’s more! Recent research suggests avocados may boost the body’s ability to absorb fat-soluble nutrients like the carotenoids alpha- and beta-carotene found in salad favorites, such as tomatoes and carrots. Alpha- and beta carotene are considered “pro-vitamins” because the body can convert them to the essential nutrient vitamin A, important for vision and immunity.

Liven Up Your Lettuce with California Avocados

For me, nothing beats nice big chunks of California Avocado in my salad for that satisfying rich mouthfeel experience. But I do mix it up (or rather ‘toss’). I like to take advantage of the fruit’s creamy nature and integrate avocado into my salad dressing. I find the easiest way to do this is to first dice the avocado into very small pieces. Then thoroughly toss the avocado pieces together with all the salad ingredients. The avocado pieces break down a little, nicely coating the lettuce and other goodies. Add a light vinegar or lemon juice and you’re good to go!
