The Fitbloggin’ Guacamole Experience


There’s food, and then there’s experience food.  These are foods that invariably create a memory just by taking a single bite.  A hotdog at a ballgame. Watermelon by the pool. Hot cider at the pumpkin patch.

It’s not the same as comfort food, as in the way your grandma’s soup wraps around you like a warm blanket. Experience foods bring a moment to life and brings people together. 

Guacamole is the best example.

A bowl of well-crafted guacamole and a plate of crispy tortilla chips is almost all you need to create a good time. Lazy nights become more memorable. Tailgating draws a bigger crowd.  And Fitbloggin’ becomes remarkably more delicious!

We were fortunate in June to have the California Avocado Commission sponsor Fitbloggin’ 15, an annual conference for bloggers and social media users in the wellness, fitness and food space. When my session for food photography and blogging, co-hosted with Kacy Meinecke, was approved and I learned that the California Avocado Commission (CAC) was a sponsor, I knew we had to do more than just shake hands in the hallway.  CAC generously provided delicious California Avocados for our presentation, and I promised to share the recipe here with you.

Kacy and I wanted to create a delicious and memorable experience for our fellow Fitbloggers through an interactive, playful and informative cooking demo — making guacamole the most obvious option! We also served this juicy, hand-squeezed blueberry lemonade. That should be experienced by everyone.

I first created this guacamole recipe in 2009. I kept it simple with six ingredients I almost always have on hand, and you probably do, too. I also ensured it was delicious by nixing the onions (the fastest way to ruin good food!). 

This chunky guacamole — featuring warm serrano peppers, tart lime juice, fresh cilantro, and juicy Roma tomatoes — has been shared with friends and family in some of my most memorable experiences. We enjoyed it the night my daughter came home from the hospital, at my sister’s wedding, at our annual Koskiepalooza reunion and in a ballroom with my dear Fitbloggin’ friends.

I’ve never published this before, so I’m thrilled to share the recipe with the California Avocado Commission and all of you for the first time! More people should get the chance to share great experiences over an exceptional bowl of guacamole. 

Koskie’s Chunky Guacamole 

Recipe created by Brandi Koskie and shared with the California Avocado Commission. 

Serves: 4
Prep time: 10 minutes
Cook time: 0 minutes
Total time: 10 minutes

Ingredients

  • 3 ripe, fresh California Avocados, seeded, peeled and quartered
  • 1 serrano pepper, seeds removed, finely diced
  • 1 handful, chopped cilantro
  • ½ -1 lime, juiced
  • 1 Roma tomato, diced
  • Kosher salt to taste
  • 1 tsp. paprika


Instructions

  1. Combine all the ingredients, except the paprika, in a mixing bowl.
  2. With an avocado/potato masher, mash the ingredients to combine everything.  A few mashes is all that’s necessary to maintain a thick and chunky consistency.
  3. Flavor test and add more salt or lime juice if needed. 
  4. Sprinkle the top with paprika. 


Serving suggestion: Serve with tortilla chips, crudités, breakfast burritos, tacos, salads, soups, sandwiches and just about anything else!
