Looking to learn how to make nachos with the perfect toppings? We think we crushed it (both the bag of chips and this recipe). With melted cheese over fresh chips and a generous helping of guacamole on top, these nachos are bound to be a crowd-pleaser.

This recipe takes a classic party dish to a whole new level by featuring California Avocado guacamole as its main star. Perfect for parties, game nights or even a cozy movie night in, these loaded nachos will satisfy your cravings and leave you wanting more. 1 party sized bag of nacho cheese flavored corn chips Ground Beef 1 Tbsp. olive oil 1 lb. ground beef 1 tsp. garlic salt 1 tsp. pepper 1 tsp. onion powder 1/2 tsp. cayenne pepper 1 15oz. can of black beans, drained Pico De Gallo 1/4 cup finely chopped onions 1 medium tomato, diced 1/4 cup Finely chopped cilantro 1/2 lime, juice only Cheese Sauce 2 Tbsp. butter 2 Tbsp. all purpose flour 8 oz. sharp cheddar cheese, grated 1 cup Heavy Cream 1/4 cup roasted red peppers, chopped (jarred or fresh) California Avocado Simple Guacamole 2 ripe, Fresh California Avocado, peeled, seeded and mashed lightly 1/2 lime, juice only 1/4 cup finely chopped onions 1/4 cup cilantro, finely chopped 1 medium tomato, diced As needed Salt to taste Toppings 1/4 cup black olives 2 jalapenos 1/2 cup sour cream
  1. In a sauté pan, heat oil and add spices to both sides of the ground beef.
  2. Once the oil is hot, place the seasoned ground beef in a pan. Use a wooden spoon to break up the ground beef.
  3. Let it cook for 5 minutes and add the black beans.
  4. Cook for another 2-3 minutes, until the ground beef is fully cooked.
  5. Place a sieve over a bowl, and strain the ground beef mixture into the sieve to remove the fatty liquid.
  6. Add Pico de Gallo ingredients to a bowl and mix together.

Nacho Cheese Sauce:

  1. To a saucepan, add in the butter and flour, and cook on medium heat. Mix them together until the butter is completely melted.
  2. Add in the heavy cream and cheese, and let cook, mixing periodically, until the cheese is completely melted and smooth.
  3. Turn the mixture off of the flame, add in the roasted red peppers, and mix them into the nacho cheese.

California Avocado Simple Game Guacamole:

  1. Add all ingredients to a bowl, and mix together. With a fork, press down on the avocado to lightly mash them into the mixture.

Nachos:

  1. To build the nachos, first place the corn chips on the bottom of the plate.
  2. Distribute the nacho cheese, ground beef mixture, Pico de Gallo, guacamole, and toppings evenly over the corn chips.
  3. For an even more decadent nacho plate, add another layer of Doritos again, and another layer of the toppings.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
