Ingredients

    Quesadilla

  • 4.0004 (10-inch) flour tortillas
  • 3.0003 cup shredded mozzarella cheese
  • 0.250¼ cup crumbled blue cheese
  • 2.0002 Roma tomatoes, sliced in 1/8-inch slices
  • 1.0001 ripe, Fresh California Avocado, peeled, seeded and sliced
  • 1.0001 cup cooked bacon crumbles
  • 4.0004 tsp. diced red onion
  • 0.250¼ cup julienne-cut fresh spinach

    Avocado Ranch Dressing

  • 0.500½ ripe, Fresh California Avocado, peeled, seeded and diced
  • 1.0001 cup ranch-style dressing
  • 3.0003 Tbsp. freshly chopped parsley

Instructions

Quesadilla

  1. Spread the cheeses over the entire surface of the tortillas.
  2. Layer the remaining fillings over half of the tortilla surfaces. Nestle the slice of tomato in the curve of each slice of avocado.
  3. Fold quesadilla in half. Brown quesadilla on a medium grill on both sides. Cut into quarters. Serve with Avocado Ranch Dressing.

Avocado Ranch Dressing

  1. Blend all ingredients in a blender until smooth, stopping to scrape down sides. Keep refrigerated until ready to serve.
Yield: 4 quesadillas, (one-half quesadilla portion)

Serving Suggestions:
Serve one or more quesadillas per serving for an entrée.

Beverage Pairings:
Great with fresh fruit juice.
