California Avocado grower John Scudder has been making this creamy pie for over 25 years. California Avocado and lemon juice, rather than lime juice, create its pretty color and tropical taste.

(14 oz.) can sweetened condensed milk

(9-inch) prepared graham cracker pie crust

Whipped cream, for garnish

Instructions
- Blend avocado, lemon juice, lemon zest and sweetened condensed milk until smooth.
- Pour mixture into prepared pie crust.
- Top with whipped cream and sliced almonds, if desired.
- Place pie in refrigerator for 3-4 hours and allow to set.
- Slice and serve.
Serving Suggestion: Use a pastry bag to pipe the whipped cream onto the pie like a pro!

Will make it again
I loved this! If it's still a little runny after blending it all up just add some more avocado. Mine kept in the fridge for about 3 days so plan on servin it after the chill period.
Also you could always do minis of this with little jars or inidividual small bowls...may do that next time

Making this in advance
Sarah, the pie should hold up well for about a day in the refrigerator. After that you run the risk of the pie discoloring due to oxidation.

hi Elsie, great question. An "average" size Hass Avocado should mash up to about 2/3 cup. Hope you enjoy the recipe!

California Summer Avocado Pie
This California Summer Avocado pie sounds scrumptious, but we only receive very small avocados in our area. Can you suggest how many cups of mashed avocado to use in the recipe, please?
