SEAFOOD AND AVOCADO SUMMER SALAD
pkg. (6 oz.) Fresh Express® 5-Lettuce Mix™
red onion, finely chopped
fresh mango, diced
red bell pepper, julienne sliced
small cooked shrimp and/or lump crab meat
ripe Fresh California Avocados, diced
Litehouse® Ranch Dressing
- In a large salad bowl toss together Fresh Express 5-Lettuce Mix, red onion, celery, mango and red bell pepper.
- Top with shrimp or crab and ripe Fresh California Avocado.
- Toss with Litehouse Ranch Dressing just prior to serving.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
