- 32 mint leaves, plus extra for garnish
- 2 Tbsp. powdered sugar
- 8 oz. lime juice
- 1 ripe, Fresh California Avocado, seeded, peeled and cut into quarters
- Crushed ice
- 8 oz. white rum
- 8 oz. club soda
- Place mint leaves in the bottom of tall “mojito” glasses. Top with powdered sugar, lime juice, and avocado. Using a muddler or a long fork, muddle the mixture together to mash the avocado and crush the lime leaves.
- Top with crushed ice, rum and club soda. Stir well and serve.
