Ingredients

  • 2 ripe, Fresh California Avocados, seeded
  • 10 oz. crab meat, picked clean
  • ¼ cup Green Goddess Dressing (see make-ahead recipe below)
  • ¼ tsp. chopped parsley
  • ¼ tsp. chopped chives
  • ¼ tsp. chopped chervil
  • 1 Tbsp. micro amaranth
  • 1 grapefruit, sectioned
  • Green Goddess Dressing

  • ¼ Fresh California Avocado
  • ½ cup mayonnaise
  • ½ cup sour cream
  • cup heavy cream
  • ½ lime, juiced and zested
  • cup chopped cilantro
  • ¾ tsp. chopped parsley
  • ¾ tsp. chopped chives
  • ¾ tsp. chopped chervil
  • 4 anchovy fillets, rinsed

Instructions

Baked California Avocado with Crab

  1. Cut a small slice off the bottom of each avocado half so they are stable
  2. Mix crab with a Green Goddess Dressing, parsley, chives and chervil
  3. Divide the crab mixture evenly among the avocado halves
  4. Place filled avocado halves in a baking dish with a 1/2 inch of water. Bake at 300 degrees F until center is warm, about 20 minutes
  5. To serve, top each avocado half with even amounts of amaranth and place next to even amounts of grapefruit sections

Green Goddess Dressing

  1. Combine all ingredients in a blender; blend until smooth.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
