Ingredients

  • 1 ripe, Fresh California Avocado, peeled and seeded
  • 1 small can water-packed tuna, drained
  • 3 Tbsp. mayonnaise
  • 2 cucumbers, peeled and thinly sliced
  • 4 strips bacon, fried crisp and cut in half.
  • 12 slices whole wheat bread, lightly toasted

Instructions

  1. Mash avocado and set aside.
  2. Mix tuna with mayonnaise. Spread tuna on one third of the toasted bread slices.
  3. Add a layer of cucumbers.
  4. Add a slice of toast on top of the cucumbers and top with avocado.
  5. Top avocado with bacon.
  6. Finish with a top slice of toasted bread.
Serving Suggestions:
For a tall, deluxe sandwich, double the tuna and mayonnaise. For a more modest sandwich, omit the middle slice of bread.

Beverage Pairings:
Nice with fresh lemonade.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
