These golden brown beer-battered fritters make a quick and easy hors d'oeuvre. Guests always remark that they've never had cooked avocados and how good they taste.

Ingredients

  • 1 cup flour
  • 1 egg
  • 1 can beer
  • 1 tsp. salt
  • 1 jalapeno, finely minced
  • 2 avocados, diced
  • 1 lb. small raw shrimp, cleaned & peeled

Instructions

  1. Mix first 5 ingredients to form batter.
  2. Fold in avocado and shrimp.
  3. Drop heaping tablespoons of mixture into hot oil.
  4. Fry approximately 2 minutes until golden brown.
  5. Drain and serve hot.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
