Spring is undoubtedly my favorite time of the year. The weather is nice and mild – not too hot, not too cold – California Avocado trees are in bloom, avocados are coming off of the trees and the selection of locally produced (California or USA grown) fruits and vegetables gets so much better! Chopped Cilantro Spinach Salad with Avocado
This Chopped Cilantro Spinach Salad with Avocado recipe is an excellent one to have around for spring time or any time. The addition of Gourmet Garden
products truly make it a cinch to whip up if you're in a pinch for salad ingredients, but don't want to sacrifice freshness and flavor. My common modification? More jalapeno and add cooked ground turkey meat seasoned with a little cumin, chile powder, paprika and salt and pepper. Yum!
California Avocado Deviled Eggs
I love this recipe. Partially because it is from Chef Ivy Stark and she makes some delicious food, but also because it’s a twist on the traditional deviled eggs I grew up eating and the nostalgia of deviled eggs brings me happy thoughts. She cut out a bunch of the mayonnaise (you can always remove it completely if you like – I do) and replaced it with tasty ingredients like California Avocados, Dijon mustard, capers, cumin, jalapeno peppers and chile powder. You will blow your friends and family away with this recipe. It will not disappoint!
Grilled Shrimp and California Avocado Open-Faced Sandwich
This recipe, provided by Chefs Mike Fagnoni and Molly Hawks of Hawks Restaurant is one you’ll want to bookmark as a must-try spring dish. Combine a house-made spicy marinade, heirloom tomato vinaigrette with shrimp, slices of baguette and fresh California Avocados and you have yourself a winning sandwich.
Chili Rubbed Salmon with Cilantro Avocado Salsa
Salmon is by far my favorite fish. To me, you can’t get any better than fresh, wild Copper River Salmon in late-Spring. Treated simply, and covered in an amazing tomatillo, jalapeno avocado salsa, this paleo-friendly and Mediterranean Diet-approved recipe is full of protein and good fats that will both satisfy and delight. The salsa is also great on its own or atop grilled meats as well.
California Avocado Chocolate Chip Cookies
If you’re wondering why anyone would ever put an avocado into a cookie – you’re in for a surprise. Chris at Café Sucre Farine developed these for us and let me tell you… they are to die for. We ate the whole test batch the first day. The avocado replaces some of the saturated fat (butter) and white whole wheat flour – which has all the nutritional benefits of regular whole wheat flour – is used in addition to all-purpose flour. Definitely give these or one of our other avocado desserts a try!
